2. The AI curve — where this business is heading
AI advances rapidly month over month. As each new model ships, we re-fine-tune the accumulated head-restaurant data against the new base. Through this stepwise upgrade path, we aim — within 1–2 years — for a complete version specialized to each head restaurant's cooking that surpasses the head-restaurant chef's teaching capability. The current build is around 70% of that complete version — an engineering roadmap, not a present guarantee, dependent on each restaurant's footage and on validation we have not yet completed.
The head-restaurant chef is the originator of the cuisine itself, and that mastery is not something AI imitates. Where AI can overtake is the teaching dimension — transferring that mastery consistently to many learners, without fatigue, over time.
3. Where we're heading
The ultimate vision is simple — to add a little more happiness to a few more tables, through slightly better food.
So that the depth of authentic Korean head-restaurant flavor is not lost to geography, so that franchise locations learn the real flavor rather than an imitation, so that diners experience the head restaurant's depth in any city — that is the direction this system is heading.
